As the summer quickly approaches, I'm sure a lot of you are scrambling to find good recipes. Look no further... Barbeque Pineapple!! This tasty dish can be served as a desert or a side to an entrée.
Ingredients
- 1 Fresh pineapple
- 1/4 cup of rum
- 1/4 cup of brown sugar
- 1 tbsp. ground cinnamon
- 1/2 tsp. ground ginger
- 1/2 tsp. ground nutmeg
- 1/2 tsp. ground cloves
Directions
- Peel the pineapple and, leaving it whole, cut the core out. Slice into 8 rings, and place them in a shallow glass dish or resealable bag. Then in a bowl, mix the rum, brown sugar, cinnamon, ginger, nutmeg, & cloves. Once mixed pour over pineapple, cover, and put in fridge for at least an hour, or overnight.
- Preheat grill for high heat. Lightly oil the grill grate.
- Proceed to grill the pineapple for 15 minutes, flipping outside is dry and char marked. Use the rest of the marinade as a side sauce
